They're lemon-meringue pie in a cookie! What more could you want, honestly, other than a pony I mean.
Ingredients:
* 2 1/2 (and then some) cups flour
* 1/4 tsp salt
* 1/2 tsp baking soda
* 2/3 cup sugar
* 1 cup margarine
* zest of 2-3 lemons
* 1/4 cup silken tofu
* juice of half a lemon
Preheat the oven to 400 degrees F.
In a medium sized bowl, sift (or use an egg beater to add air) together the flour, baking soda and salt
In a separate large bowl, beat together the sugar, vegan margarine and lemon zest until smooth and fluffy. Add the tofu and whip until well mixed, this should taste absolutely yummy. Add the flour mixture and fold in with a rubber spatula (DO NOT BEAT!) Add more flour if necessary to create a soft dough which peals away slightly from the bowl, not as floury as bread dough though.
Heap spoonful portions of dough onto cookie sheet and flatten with the bottom side of a glass dipped in sugar.
Bake for 8-10 minutes, edges should be lightly golden-brown.
