Golden Plum Jam à la Arthur
I apologize for the poor picture quality. In the original you can see the vanilla specs. This jam is esthetically pleasing as well as my brother's favourite spread.
4 heaping cups of golden plums (Halved)
2 cups Fructose
2 tbsp Pectin
1 vanilla bean
Mix the pectin and fructose together. Place the plums and the fructose mix in a medium pot (ideally copper) on medium heat and allow to give off juices (simmer, stirring occasionally). Split the vanilla bean in half and add it to the pot. Cook for another 30 minutes, stirring occasionally and mashing with a fork or other utensil to give a more uniform look. Pour into sterilized jars.
You may wish to add more pectin if you like a firmer jam.
