Summer Garlic and Tomato Soup
2 large red onions
7-8 large garlic cloves
1/2 tsp salt
2 tsp dried dill
Pepper to taste
1 tbsp olive oil
8 large tomatoes, diced
4 cups vegetable bouillon
2 tbsp brown sugar
Mince the onions and garlic together in a food processor. Combine olive oil, minced vegetables, salt dill and pepper in a large pot on medium heat and sautée for five minutes (until most of the water from the onions is gone). Add the sugar, tomatoes and vegetable bouillon. Simmer covered for 25 minutes (until tomatoes have become 'mushy' and look like they're disintegrating). Blend using a hand blender. Taste and adjust seasoning as necessary.
Serve with whole grain bread.
